Henny's Chicken Pizziola

4 x 150g flattened raw chicken breasts (no skin)

1/2 cup (65g) diced lean ham

1/2 cup thinly sliced mushrooms

1/2 cup thinly sliced capsicum

1/2 cup shallots or thinly sliced onion

1/2 cup diced tomato

1 teaspoon crushed garlic

1/2 teaspoon basil

4 dessert spoons tomato paste

1 cup grated light mozzarella cheese or 25% reduced fat tasty cheese
Preheat oven 180 degrees C.

Flatten chicken breast with meat mallet.

In a medium size mixing bowl, mix together ham, mushrooms, capsicum, shallots, tomato, garlic and basil.

On a baking tray that has been coated with cooking spray place raw flattened chicken breast then spread 1 dessertspoon of tomato paste over each breast.

Spread pizza topping evenly over each chicken breast.

Sprinkle 1/4 cup cheese over each piece.

Bake 30-40 minutes or until chicken is cooked and topping is golden brown.

VARIATIONS: Replace chicken breasts with veal schnitzels, 4 x 120g
