Jenni’s Chilli Con Carne

1 br onion
2 celery sticks
500g turkey mince
2 tspn cumin
2 tspn paprika
1 tspn chilli powder
Salt and pepper
1 can beans, drained and rinsed - I have used black beans and four bean mix
1/2 cup lentils
1 red capsicum diced
1 and 1/2 cup water
1 cup chopped coriander
Heat oil, add celery and onion and cook until soft, add mince and spices. Next add tomato, capsicum and lentils, plus water.
bring to boil, and simmer 15 minutes. Add beans, salt and pepper. Cook for a few minutes and add coriander. Serve with Greek yogurt or enjoy in a lettuce cup.
